VIOLET’S GLUTEN-FREE CINNAMON ROLLS

These hot puffy, swirly cinnamon rolls smell exactly like Christmas morning! The bonus is that they work for your food intolerant crew because they are gluten-free, dairy-free and egg-free! For those who can eat everything, you won’t even notice the difference! Here’s Violet’s step by step recipe!

Gluten-Free Cinnamon Rolls

  • 16 oz Bob’s Red Mill Gluten Free Bread Mix
  • ½ cup organic sugar
  • 4 ½ tsp (2 packets) instant yeast
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 1 tsp sea salt
  • 1 ¼ cups water
  • ½ cup unsalted Myokos Vegan Butter
  • 1 tsp apple cider vinegar
  • 1 tablespoon + 1 ½  teaspoons Bob’s Red Mill Egg Replacer + 4 tablespoons water
  • Organic cornstarch, for dusting

Dairy-Free Cinnamon Sugar Filling

  • 8 tablespoons (1 stick) Myokos Vegan Unsalted Butter
  • ¾ cup organic brown sugar
  • 3 tablespoons ground cinnamon

Dairy-Free Icing

  • ½ cup Myokos Vegan Unsalted Butter
  • 3 cups organic powdered sugar
  • 3-6 tablespoons organic almond milk
  • 1 tablespoon maple syrup
  • 1 tablespoon vanilla extract

For the Cinnamon Rolls

Attach the dough hook to the stand mixer. Add the bread flour (discard the yeast packet that comes with it), sugar, instant yeast, baking powder, baking soda, and salt into the bowl of the stand mixer. Blend together on low until just combined.

In a large glass measuring cup, add the water, vegan butter, and vinegar. Microwave for 1-2 minutes until the water is warm, but not hot. This will activate the yeast. The butter does not need to be completely melted.

Turn on the stand mixer to medium and slowly add the water mixture. Scrape the bowl as needed with a spatula to incorporate any dry ingredients that stick to the sides of the bowl.

Meanwhile, combine the egg replacer with the water and stir to combine. Turn the mixer back on medium and add the egg replacer.

Turn stand mixer up to medium high and mix for 5 minutes. The dough will be smooth and slightly stretchy. Turn off the mixer and let the dough rest for 10 minutes.

On a large flat surface, place a layer of plastic wrap large enough to be beneath the dough rolled out to 14”x20”.  Cover the plastic wrap with a light dusting of cornstarch.

When the dough is rested, place the dough onto the plastic wrap. Sprinkle a bit more cornstarch on the top of the dough and using fingertips, press it into a flat rectangle.

Use a rolling pin to roll out to the full 14x20” rectangle.

For the Cinnamon Sugar filling:

Combine softened vegan butter with the brown sugar and cinnamon. Using a fork, blend to combine. Butter must be very soft to spread evenly and not tear the dough.

Spread the Cinnamon Sugar filling evenly over the dough, almost all the way to the edges. Using fingertips to spread the mixture can help to keep the dough in tact.

To roll the dough, use the plastic wrap to create the beginning of the roll, from the bottom. 

Continue rolling until you have one long 20” roll. Remove the plastic wrap and discard.

Prepare a large 10” cast iron skillet, by coating the bottom and sides with vegan butter.

To cut the rolls, start by cutting off both ends of the roll, about 3 inches on each side. Cut the rolls to about 3” long each.

Place one roll into the center of the pan, then arrange the remainder in a circle around it.

Let the rolls rise for about 45-60 minutes in a warm spot. A slightly warmed oven can be used. Heat the oven to lowest temperature as soon as it comes up to heat, turn it off and add the skillet. After they have doubled in size, remove from the oven.

Preheat the oven to 350 degrees. Place the skillet back into the hot oven for 25-30 minutes, until the rolls are golden brown with bubbling cinnamon sugar. The dough should gently spring back when touched.

For the Icing:

Combine softened vegan butter, powdered sugar, maple syrup and vanilla extract and plant milk. Adjust the level of plant milk to reach the desired consistency for the icing.

When the Cinnamon Rolls are done, remove from oven. Add the frosting to coat the cinnamon rolls and let it melt over the hot cinnamon rolls. Serve immediately!
